I found this recipe and then tweaked it a little. It's great for breakfast, brunch or as a snack! Ingredients:
3 cups sliced peeled tart apples |
1/3 cup sugar |
1 tablespoon quick-cooking tapioca |
1-1/2 teaspoons lemon juice |
3/4 teaspoon ground cinnamon |
1/8 teaspoon salt |
1 tube large refrigerated buttermilk biscuits |
Directions:
1. In a large saucepan, combine the apples, sugar, tapioca, lemon juice, cinnamon, and salt. 2. Let stand for 15 minutes. 3. Cook over medium heat for 8-10 minutes or until apples are tender. 4. Transfer apple mixture to a greased 9-in. pie plate or shallow baking dish. 5. Place biscuits over apples. 6. Bake at 375° for 18-20 minutes or until biscuits are browned. Immediately invert onto a serving plate. |
