A different, tasty salsa. Ingredients:
3 cups peeled, cored and chopped tart apples (like granny smith's) |
3 cups peeled, chopped tomatoes |
1 1/2 cups chopped red onions |
4 -6 jalapenos, minced |
1 red bell pepper, chopped |
1/2 cup semi-packed cilantro, chopped fine |
1/2 cup white vinegar |
2 teaspoons liquid honey |
1 clove garlic, minced |
1 1/2 teaspoons ground cumin |
1/2 teaspoon cayenne pepper |
Directions:
1. Combine all of the ingredients in a large stainless or enamel saucepan. 2. Bring to a boil stirring constantly to prevent scorching. 3. Boil gently for 10 minutes. 4. Ladle into clean hot jars, wipe rims and seal. 5. Process in a boiling water bath for 10 minutes at altitudes up to 1000 feet. |
