APPLE TAPIOCA This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.
Ingredients:
1/2 cup sugar
1/2 teaspoon salt
1/2 cup quick cooking tapioca
2-1/2 cups boiling water
1/4 teaspoon nutmeg
3 cups sliced pared cored apples
cream
Directions:
1. Combine sugar, salt and tapioca in a double boiler.
2. Add boiling water while stirring and cook over hot water until tapioca is transparent.
3. Add nutmeg and apples then pour into a greased covered baking dish.
4. Bake at 350 for 1 hour and 15 minutes then serve hot or cold with cream.
