I got these out of a magazine, and they are the best muffins I've ever tasted! They taste best when served warm.
Ingredients:
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup butter, melted
1 1/4 teaspoons vanilla extract
1 1/2 cups chopped peeled tart apples
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter
1 1/2 cups confectioners' sugar
1 -2 tablespoon milk
1 teaspoon butter, melted
1/4 teaspoon vanilla extract
1/8 teaspoon salt
Directions:
1. In a bowl, combine the flour, sugar, baking powder, baking soda and salt.
2. In another bowl, whisk the eggs, butter and vanilla; Stir into dry ingredients just until moistened (batter will be stiff). Fold in apples.
3. Fill greased or paper-lined muffin cups three-fourths full.
4. In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.
