Tasty muffin for breakfast or snacks. Ingredients:
1 1/2 c. flour |
1/2 c. wheat germ |
1/4 c. sugar |
1 tbsp baking powder |
3/4 t. cinnamon |
1/2 t. salt |
1 c. peeled, chopped apple |
1 c. 2% low-fat milk (i use my homemade yogurt) |
1/4 c. oil |
1 egg |
1/4 c. sugar |
3/4 t. cinnamon |
1/3 c. chopped nuts |
2 tbsp melted butter |
Directions:
1. Heat oven to 400F. Grease muffin cups. 2. In large bowl, combine flour, wheat germ, 1/4 c. sugar, baking powder, 3/4 t. cinnamon, and salt. Stir in apple. 3. In small bowl, combine milk, oil, and egg. Add to flour mixture, stirring just until moistened. 4. Fill muffin cups almost full. In small bowl, combine remaining sugar, cinnamon, nuts, and butter. Sprinkle over muffins. 5. Bake 20-25 minutes or until golden brown and wooden pick inserted in center comes out clean.. Remove from pan. |
