I found this recipe in Spry magazine. It was submitted by reader Bonnie Vonbergen. the cake is moist and full of fiber. It gets its sweetness naturally - from honey. Ingredients:
1 1/2 cups whole wheat flour |
3 tablespoons natural bran |
1 1/2 teaspoons baking soda |
3/4 teaspoon ground cinnamon |
3/8 teaspoon ground nutmeg |
3 cups apples, shredded |
1 cup honey |
3/8 cup safflower oil |
3/4 cup nuts (optional) |
2 eggs, well beaten |
3/4 teaspoon vanilla extract |
Directions:
1. Preheat oven to 350 degrees F; spray a 9x13-inch baking pan with cookijng spray. 2. In a large bowl, combine flour, bran, baking soda, cinnamon, and nutmeg; stir in honey, oil, and eggs. 3. Add vanilla, apples, and optionally, nuts; mix well. 4. Bake until toothpick inserted comes out clean, about 35 minutes. |
