A fresh fruit Slaw for a refreshing lunch. Will go well with a sandwich, chips, and a cold Lemonaide. Ingredients:
ingredients |
1 cup coarsely chopped unpeeled jonathan apple |
1 tsp. lemon juice |
2 tbs. nonfat sour cream |
4 1/2 tsp. skim milk |
1 tbs. frozen apple juice concentrate, thawed |
1 tsp. sugar |
3/4 tsp. poppy seed |
1/2 cup sliced carrot |
1/3 cup shredded green cabbage |
1/3 cup shredded red cabbage |
2 tbs. finely chopped green bell pepper |
additional cabbage leaves to serve on ( optional ) |
garnish with fresh greens and carrot slices ( optional ) |
Directions:
1. 1)Combine apple and lemon juice in a resealable plastic food storage bag. Seal bag; toss to coat. 2. 2)Combine sour cream, milk, apple juice concentrate, sugar and poppy seeds in small bowl until well blended. Add apple mixture, carrots, cabbages and pepper; toss to coat. Serve on cabbage leaves and garnish with fresh greens and carrot slices, if desired. 3. Calories per serving: 94 |
