Awesome and so satisfying. Great flavors all in one salad. Enjoy.
Ingredients:
3 cups chopped cooked shrimp
2 ribs celery chopped
1 apple cored and chopped
1/2 cup chopped pecans
lettuce leaves for garnish
dressing
2/3 cup extra-virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon curry powder
1 teaspoon salt
2 teaspoons freshly ground black pepper
Directions:
1. Combine shrimp, celery, apple and nuts in a mixing bowl.
2. Whisk together the dressing ingredients in a separate bowl and pour over the shrimp mixture.
3. Toss to combine and serve on a bed of lettuce.
