Awesome and so satisfying. Great flavors all in one salad. Enjoy. Ingredients:
3 cups chopped cooked shrimp |
2 ribs celery chopped |
1 apple cored and chopped |
1/2 cup chopped pecans |
lettuce leaves for garnish |
dressing |
2/3 cup extra-virgin olive oil |
3 tablespoons red wine vinegar |
1 teaspoon curry powder |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
Directions:
1. Combine shrimp, celery, apple and nuts in a mixing bowl. 2. Whisk together the dressing ingredients in a separate bowl and pour over the shrimp mixture. 3. Toss to combine and serve on a bed of lettuce. |
