Ingredients:
1 cubed peeled butternut squash (about 1 1/4 pounds) |
1 1/2 cups apple cider or apple juice |
1 tablespoon butter |
1/4 teaspoon salt |
1/8 teaspoon ground nutmeg |
Directions:
1. Place squash in a large deep skillet; add apple cider. Bring to a boil; reduce heat and simmer, uncovered, 20 minutes or until squash is tender. 2. Add butter, salt, and nutmeg; simmer 3 minutes, stirring occasionally. |
