This was in a Food and Wine mag years and years ago. I usually make it for Christmas brunch, since it can be made ahead and baked while the packages are being opened. Just scramble up enough eggs to fill the center after the ring is baked. Read more . Very good
Ingredients:
2 pounds lean unflavored bulk sausage
2 large eggs
1 1/2 c. crushed butter crackers (ritz)
1 tart, grated apple (peeled)
1/2 c. minced onion
1/4 c. milk
Directions:
1. Combine all ingredients, mix well and press into a ring mold lined with wax paper. CHILL overnight.
2. Unmold, removing paper. Place onto baking sheet with raised edges.
3. Bake at 300 deg. for 1 hour
4. Fill center ring with scrambled eggs before serving.
5. Great with a decorative sweet-roll Christmas wreath, etc.
