good breakfast on the run Ingredients:
1/2 c. butter |
3/4 c. sugar |
1 egg |
2 c. flour |
1/2 c. nuts, chopped |
1/2 tsp. salt |
3 tsp. baking powder |
1/4 tsp. cloves |
1/2 tsp. cinnamon |
1/2 tsp. nutmeg |
1 c. apple sauce |
Directions:
1. Soften butter. 2. Mix with sugar. 3. Add egg. 4. Mix all dry ingredients together. 5. Add to first mixture, alternating with apple sauce. 6. Beat well. 7. Add nuts and raisins. 8. Fill muffin tins that have been lined with paper baking cups (3/4 full). 9. Before baking, sprinkle with topping of 1/2 cup brown sugar and 1 teaspoon cinnamon mixed together. 10. Bake at 375 degrees for 20-25 minutes. Makes 20 muffins. |
