This loaf is quick to make and our family loves it. It keep well and is great for school lunches. Ingredients:
1 cup shortening |
1 cup sugar |
2 eggs |
1 3/4 cup flour |
1 tsp salt |
1 tsp baking powder |
1/2 tsp soda |
1/2 tsp cinnamon |
1/2 tsp nutmeg |
1 cup sweetened apple sauce |
1/2 cup chopped walnuts |
glaze |
1/2 cup icing sugar |
1 tbsp water |
Directions:
1. In a mixing bowl, stir shortening to soften; gradually add sugar, creaming until light. Add eggs; beat till light and fluffy. Sift together dry ingredients; add to creamed mixture alternately with applesauce, beating after each addition. Stir in nuts. 2. Pour into well greased 9 1/2 x 5 x 3 inch loaf pan. 3. Bake 350 for approximately 1 hours. 4. Cool in pan for 10 minutes, remove to cooling rack. 5. Cover with a sugar glaze mixing the 1/2 cup icing sugar with 1 tbsp water. Milk can be used instead of water. |
