Apple Salad With Creamy Maple Dressing |

I got this out of a coupon paper, it looks awesome. I'd like to use granny smith apples with this, and it calls for 2 apples so I picked one of each recommended. I'm also subbing the cranberries for chopped dates because it looks sweet enough! Ingredients:
1/2 cup canola oil |
1/4 cup maple syrup (4 tb) |
1/4 cup mayonnaise (4 tb) |
3 tablespoons white wine vinegar |
2 teaspoons sugar (i'd probably halve this if using really sweet syrup) |
salt and pepper, to taste |
5 ounces mixed baby greens |
1 gala apples, cored and chopped |
1 red delicious apple, cored and chopped |
1/2 cup dried cranberries |
1/2 cup chopped walnuts |
Directions:
1. Whisk together the syrup, mayo, vinegar, and sugar in a medium bowl. 2. Whisk in the oil gradually until the mixture thickens slighlty, season with salt and pepper to your liking. 3. Toss the greens, apples, cranberries, and half the walnuts together in a large bowl, toss with enough dressing to coat. 4. Sprinkle with remaining walnuts, and serve. |
