Apples and mint; what's not to like here? I like this recipe because it's easy to keep the ingredients for it on hand, and it goes so well with grilled meats. Makes for an easy dinner.
Ingredients:
3 crispy apples (like braeburns)
3 tablespoons fresh lemon juice
3 stalks celery, thinly sliced
1/2 cup toasted nuts (i like pecans)
1/2 cup dried fruit (i like raisins)
2 tablespoons honey
1 1/2 tablespoons apple cider vinegar
salt
1/4 cup minced fresh mint
Directions:
1. Chop apples into half inch chunks.
2. Toss apples with lemon juice.
3. Mix in everything else.
4. Yum.
