APPLE RICE PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bradley Estate in Arlington, Texas in 1987. Ingredients:
2 eggs |
1/2 cup sugar |
1/4 teaspoon salt |
1/2 cup sour cream |
1-1/4 cups evaporated milk |
2-1/2 cups cooked rice |
1 granny smith apple peeled, cored and chopped |
1 cup shredded medium sharp cheddar cheese |
1/2 cup raisins |
1/4 cup firmly packed brown sugar |
1 tablespoon all purpose flour |
1 teaspoon cinnamon |
1 tablespoon melted margarine |
Directions:
1. Combine first five ingredients in a bowl then stir in rice, apples, cheese and raisins. 2. Spoon into a lightly greased square baking dish. 3. Combine brown sugar, flour, cinnamon and margarine then sprinkle over rice mixture. 4. Bake uncovered at 350 for 45 minutes. |
