APPLE RICE PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bradley Estate in Arlington, Texas in 1987.
Ingredients:
2 eggs
1/2 cup sugar
1/4 teaspoon salt
1/2 cup sour cream
1-1/4 cups evaporated milk
2-1/2 cups cooked rice
1 granny smith apple peeled, cored and chopped
1 cup shredded medium sharp cheddar cheese
1/2 cup raisins
1/4 cup firmly packed brown sugar
1 tablespoon all purpose flour
1 teaspoon cinnamon
1 tablespoon melted margarine
Directions:
1. Combine first five ingredients in a bowl then stir in rice, apples, cheese and raisins.
2. Spoon into a lightly greased square baking dish.
3. Combine brown sugar, flour, cinnamon and margarine then sprinkle over rice mixture.
4. Bake uncovered at 350 for 45 minutes.
