I love to serve this with a rotisserie chicken and green beans. Ingredients:
1 tablespoon butter |
1/8 cup chopped onion |
1/4 cup chopped granny smith apple |
2 cups apple juice |
2 cups uncooked rice |
1 cup chicken broth |
1/2 teaspoon ground thyme |
1/2 teaspoon salt |
Directions:
1. Saute onions and apple in butter until tender. Add apple juice and bring to a boil. 2. Add rice, salt, and thyme and simmer on low for 15 minutes or until almost done. Add broth and simmer until absorbed. |
