We have 30 apple trees, so I am always looking for new recipes to us them. This is a favorite of my kids. Adapted from Quick Cooking. Cooking time does not include chilling time. Ingredients:
2 cups apple juice |
1 1/2 cups chopped peeled tart apples (about 2 medium) |
1 cup uncooked instant brown rice |
1/2 cup raisins |
1/2 teaspoon ground cinnamon |
1/8 teaspoon salt |
1/3 cup splenda granular, sugar substitute |
6 tablespoons reduced-fat whipped topping |
Directions:
1. In a saucepan, combine the first six ingredients and bring to a boil. 2. Reduce heat, cooking and stirring for 6-7 minutes or until most of the liquid is absorbed and rice is tender. 3. Remove from the heat and mix in Splenda. 4. Refrigerate for 1 hour. 5. Garnish with whipped topping if desired. |
