Ingredients:
3 tablespoon(s) butter |
1/4 cup(s) butter |
1/2 cup(s) celery chopped |
1 cup(s) chicken broth |
1/4 cup(s) chopped fresh parsley |
1 egg, slightly beaten |
2 tablespoon(s) flour |
1/2 teaspoon(s) leaf sage, crumbled |
1 medium onion finely chopped |
1/4 teaspoon(s) pepper |
4 pork chops 1 3/4 inch thick |
4 slice(s) raisin bread, crumbled |
1 tablespoon(s) salt |
1 small apple, pared, cored and chopped |
1/3 cup(s) water |
Directions:
1. Saute' onion and celery in 3 tbsp butter 4 minutes until tender. Remove from heat. /add bread crumbs, apple, parsley, salt, sage, thyme, and pepper; Toss lightly. Add egg mix well. Cut deep pockets into fatty side of each chop. Fill loosely with stuffing; secure with toothpick. Melt 1/4 cup butter in a large skillet. Brown chops 4 minutes each side. Add water. Bring to a boil, lower heat, cover and simmer 40 minutes or until tender. Transfer to platter. Stir flour into drippings, cook 1 minute. Stir in chicken broth. Stir and cook until gravy thickens. |
