Adopted recipe. These are nice and tender. I think the added sugar on the top makes them just right. You could probably mix the confectioners sugar with a little water to make a glaze for them too. Ingredients:
2 cups flour |
3 teaspoons baking powder |
2 tablespoons sugar |
1/2 teaspoon cinnamon |
1/2 teaspoon salt |
6 tablespoons butter |
1 cup apple, peeled, chopped fine |
1/2 cup raisins |
4 -5 tablespoons apple juice, cold or 4 tablespoons water |
1 tablespoon confectioners' sugar |
Directions:
1. Preheat oven to 400 deg F. 2. Mix together dry ingredients. 3. Cut in shortening as you would for a pie crust. 4. Stir in apples and raisins. 5. Add enough juice to make a stiff dough. 6. On floured surface, roll dough about 1/2 thick.Apprx. 8 in circle. 7. Cut into triangles and bake on cookie sheet for 20-25 minutes, or until light brown. 8. Remove from oven and dust with 1 TBsp confectioners sugar. 9. Let cool. 10. Separte triangles. |
