Apple Raised Stuffed Acorn Squash |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wasserstrum Estate in Duncanville, Texas in 1991. Ingredients:
3 medium acorn squash |
2 tablespoons butter |
3 cups peeled and chopped tart apples |
1 cup chopped white onion |
1/2 cup golden raisins |
2 tablespoons light brown sugar |
1 teaspoon ground cinnamon |
1-1/2 cups grated cheddar cheese |
Directions:
1. Preheat oven to 350. 2. Cut squash in half lengthwise and scoop out seeds and strings. 3. Bake cut side down in 1/2 of water for 40 minutes. 4. In a skillet melt butter and saute apples and onion for 10 minutes. 5. In large bowl combine apples and onion with raisins, brown sugar, cinnamon and cheese. 6. Place cooked squash on a cookie sheet and divide apple stuffing evenly among cavities. 7. Bake at 350 for 20 minutes. |
