This European kuchen has a non yeast dough base and apples and quark filling. mürbteig dough ( mellow dough base, non yeast ) |
200 g flour |
1 pinch salt |
50 g sugar |
1 large egg |
100 g cold butter or margarine |

8 – 10 large apples |
3 eggs separated |
1 tbs cold water |
125 g sugar |
1 pkt vanilla sugar or use 2 tsp vanilla |
1 tbs semolina |
30 g cornstarch |
1 heaping tsp baking powder |
250 g quark |
Directions:
1. Preheat oven to 200C 2. Make a dough by mixing the flour, salt, sugar, egg and margarine. 3. Grease a 24-26 cm springform pan 4. Roll out dough and fit into pan 5. Cut apples into slices 6. Beat whites stiff 7. Beat yolks with the cold water then beat in the vanilla sugar, and sugar and beat very creamy and thick 8. In a small bowl combine baking powder, cornstarch and semolina flour 9. Carefully fold this into the egg whites 10. Then blend into the creamed mixture. 11. Fold in the apple slices and the quark 12. Place this apple cheese mixture over the dough and fill pan 13. Bake in middle oven rack,about 50 minutes or done 14. Remove to rack and let cool completely before removing sides from springform pan 15. Dust with powdered sugar if desired |
