A spin off my chocolate banana bread, haven't tried this yet, it may be a flop!! Ingredients:
1 cup applesauce, chunky unsweetened |
3/4 cup pumpkin, canned |
4 large egg whites |
1 cup whole wheat pastry flour |
1/2 cup oat bran |
2 teaspoons baking powder |
1 tablespoon cinnamon |
1 1/2 teaspoons baking soda |
1 cup cinnamon baking chips |
Directions:
1. Preheat oven to 350°F Lightly butter a 5×9-inch loaf pan and line bottom with a piece of parchment paper, cut to fit. 2. Beat applesauce and pumpkin until smooth. Add eggs and whirl to combine. 3. In a large bowl, sift together flour, oat bran, baking powder, cinnamon, and baking soda. Stir in apple mixture until evenly moistened. Stir in cinnamon chips. Scrape the thick batter into pan and spread level. 4. Bake bread 45 to 50 minutes or until toothpick comes out clean. Loosen bread from pan with a knife and invert onto a rack. Remove parchment. Turn bread right-side-up and let cool at least 1 hour before slicing. |
