Delicious whether served warm or cooled. Warm, I serve with a scoop of vanilla ice cream. Great dessert to have during apple season in the fall. Ingredients:
2 c flour |
2 c sugar |
1 tsp baking soda |
3 eggs |
1 tsp salt |
2 tsp vanilla |
1/2 tsp cinnamon |
2 c apples -- finely chopped |
1/2 tsp nutmeg |
1/2 c raisins |
1/2 c oil |
1 c chopped pecans -- optional |
Directions:
1. In mixing bowl, combine flour, baking soda, salt, cinnamon and nutmeg. With mixer at medium speed, beat together oil, sugar, eggs and vanilla. Gradually add flour mixture, beating until smooth. Fold in apples, pecans and raisins. Pour into greased and floured 10 inch tube pan. Bake at 325 for 1 hour and 15 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes, then remove from pan. |
