Cooking an apple with the potatoes creates an appetizing side dish. Nice served with stew. Ingredients:
2 libs yukon gold potatoes |
1 granny smith apple,peeled and cubed (1-1/2 c ) |
1/4 c half and half |
2 tb unsalted butter |
salt,white pepper and nutmeg to taste |
Directions:
1. Boil potatoes and apple in pot of salted water until tender,about 15 mins,then drain. 2. Return potatoes to pot over med. heat to dry, 1 min. Remove pot from heat,add half and half and butter. 3. Mash mixture with a potato masher,then season with salt,white pepper, and nutmeg. Serve immediately or cover and keep warm. |
