This healthier alternative to apple pie à la mode offers the same sweet cinnamon and apple flavors with an added crunch. Ingredients:
4 large red delicious apples, peeled, cored, and cut into chunks (about 5 1/2 cups) |
1 cup water |
2/3 cup packed light brown sugar |
2 cinnamon sticks |
1 tablespoon vanilla extract |
2 (1.5-ounce) pouches granola snack bars (such as nature valley oats 'n honey; 4 bars), crumbled |
2 cups vanilla-caramel reduced-fat ice cream (such as edy's slow churned light caramel delight) |
Directions:
1. Combine first 4 ingredients in a medium saucepan over medium heat; simmer 15 minutes or until apples are tender and mixture thickens. Remove from heat; let stand 5 minutes. Stir in vanilla. 2. Spoon 1/4 cup apple mixture into each of 8 (8-ounce) parfait glasses. Top each with 2 tablespoons granola, 1/4 cup ice cream, 1/4 cup apple mixture, and 2 tablespoons granola. Serve immediately. |
