this is from the midwest living magazine. Ingredients:
1 1/2 cups flour |
2 tbsp sugar |
1 tbsp baking powder |
1/2 tsp apple pie spice or cinnamon |
1/4 tsp salt |
2 eggs |
1 cup apple juice |
3 tsp butter, melted or use oil |
2 tsp vanilla |
1/4 cup snipped dried apple or 1/2 cup fresh apples |

Directions:
1. In bowl, stir together flour, sugar, powder spice and salt. Make a well in the center, set aside. 2. In a small bowl, use a fork to mix together eggs, juice butter and vanilla. add this mixture to flour mixture. stir just until moistened....batter will be lumpy. stir in apple. 3. Use 1/4 cup measuring cup full of mixture, pour ont a hot, lightly greased griddle or skillet. 4. Serve warm. |
