This is a wonderful Fall dessert - looks like pie, but tastes like a good moist apple cake. Ingredients:
1/4 cup margarine |
1/2 cup sugar |
2 eggs |
1 cup flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
3 tablespoons orange juice |
1 teaspoon vanilla |
2 1/2 cups apples, peeled, finely chopped |
1/2 cup raisins |
Directions:
1. Cream margarine, gradually add sugar, beating well. 2. Add eggs; mix well. 3. Combine next 5 ingredients; add to creamed mixture alternately with orange juice, beginning and ending with the flour mixture. 4. Stir in vanilla. 5. Fold in apples and raisins. 6. Pour batter into a greased and floured 9-inch pie plate. 7. Bake at 350 for 45 minutes or until a wooden pick comes. 8. out clean. 9. Cut cake into wedges; serve with whipped cream if desired. |
