Apple-Pecan Dressing (Emeril Lagasse) |

Ingredients:
2 teaspoons olive oil |
3/4 cup diced bacon |
1/2 cup chopped onion |
1/2 cup celery |
1 1/2 cups peeled and diced granny smith apples |
1/2 cup pecan pieces |
1/4 cup chopped parsley |
1/4 cup chopped fresh sage |
salt and pepper to taste |
4 cups cubed day-old bread, cut into 1-inch cubes |
creole spice to taste-recipe enclosed |
2 cups of chicken stock |
Directions:
1. In a large skillet heat oil and cook the bacon until it's crispy, about 4 minutes. Add onions, celery, apples, pecans, parsley, sage, and cook for 3 minutes. Season to taste with salt and pepper. Stir in the bread cubes, Creole spice, and chicken stock. Cook until heated through. Remove from heat and adjust the seasonings. |
