Apple-Pecan Dressing (Emeril Lagasse)

Ingredients:
2 teaspoons olive oil
3/4 cup diced bacon
1/2 cup chopped onion
1/2 cup celery
1 1/2 cups peeled and diced granny smith apples
1/2 cup pecan pieces
1/4 cup chopped parsley
1/4 cup chopped fresh sage
salt and pepper to taste
4 cups cubed day-old bread, cut into 1-inch cubes
creole spice to taste-recipe enclosed
2 cups of chicken stock
Directions:
1. In a large skillet heat oil and cook the bacon until it's crispy, about 4 minutes. Add onions, celery, apples, pecans, parsley, sage, and cook for 3 minutes. Season to taste with salt and pepper. Stir in the bread cubes, Creole spice, and chicken stock. Cook until heated through. Remove from heat and adjust the seasonings.
