I got this recipe out of Woman's Day or Ladie's Home Journal. It's pretty darn good! Simple and the filling makes enough for 2 cheesecakes using premade graham cracker crusts. I used Granny Smith apples for a crisp baking apple. Ingredients:
1 1/2 cups packed brown sugar, divided |
4 (8 ounce) packages cream cheese |
1 teaspoon vanilla |
1 cup sour cream |
4 eggs |
4 cups apples, peeled and chopped |
3/4 cup pecans, chopped |
1 teaspoon ground cinnamon |
1 1/2 cups graham cracker crumbs |
1/4 cup butter, melted |
2 tablespoons packed brown sugar |
Directions:
1. 1. Heat oven to 325 degrees. Line 13 x 9 inch pan with foil (if making crust). 2. 2. For crust: mix crumbs, butter and 2 tablespoons of sugar. Press onto bottom of pan. 3. 3. Beat cream cheese, 1 cup sugar and vanilla with mixer until blended. 4. 4. Add sour cream, blend. 5. 5. Add eggs, 1 at a time, mixing on low speed after each until just blended. Pour over crust. 6. 6. Mix remaining sugar, apples, pecans and cinnamon. Spoon gently over batter. 7. 7. Bake 1 hr to 1 hours 5 minute Cool. Refrigerate 4 hours. Use foil to lift cheesecake from the pan before cutting. |
