Tried and true recipe that's simple and simply delicious. Great served with whipped cream, ice cream or on it's own. Ingredients:

3 cups self rising flour |
1/2 teaspoon salt |
1 teaspoon vanilla |
1 cup chopped pecans |
3 cups sugar |
1 1/4 cups vegetable oil |
1 teaspoon baking soda |
3 eggs |
3 cups peeled chopped granny smith apples |
icing |
4 ounces butter (1 stick) |
1 cup brown sugar |
1/4 cup sweetened condensed milk |
Directions:
1. Preheat oven to 325 degrees. Grease and flour a 9 x 13 pan. 2. Mix dry ingredients. Mix oil, eggs and vanilla. Add wet to dry ingredients and mix completely. Fold in apples and pecans. Bake at 325 for 30 minutes, lower oven temperature to 275 degrees and bake an additional 30 minutes. When cake is removed from the oven, poke holes in the top and pour the icing over the cake. 3. Icing: Mix ingredients and cook over medium heat until thickened. |
