This is an *AMAZING* recipe. Capable of being formal, good for the family, and kids love it. Serves well both hot and cold. Yes, I know the title sounds odd, but it is actually a great combination. You might want to serve it with a dollop of yogurt, and you also might want to add a bit more lemon juice than the recipe calls for. ALSO: Be sure not to forget to whiz it up at the end - it Ingredients:
4 onions, chopped |
8 apples, chopped |
4 parsnips, chopped |
4 carrots, chopped |
5 tablespoons soup mix (optional) |
8 tablespoons olive oil |
3 teaspoons ground nutmeg |
16 cups water |
1 1/2 lemons, juiced |
Directions:
1. Saute the onions with the olive oil in a large pot until the onions are golden. 2. Add the apples, the parsnips, the carrots, the (optional) soup mix, the nutmeg, and the water. 3. Cook on medium heat for 1 (one) hour, or until the carrots are soft. 4. When done cooking, add the juice from the lemons, then take a hand-held grinder (or you can use a blender) and blend all the soup until it is smooth and there are no lumps of anything in it. 5. Your done! The soup can be served hot or cold. |
