This is a huge hit with my family! The kids gooble this up. Best made with Granny Smith apples. Ingredients:
'*pancakes |
4 cups pancake or biscuit mix |
1tsp cinnamon |
2 eggs, beaten |
2-2/3 cups milk |
1-1/2 cups chopped apples |
'*syrup |
1/2 cup sugar |
2 tbsp cornstarch |
1/4 tsp cinnamon |
1/4 tsp nutmeg |
2 cups apple cider |
2tbsp lemon juice |
1/4 cup butter |
Directions:
1. ~*PANCAKES: 2. Mix all ingredients together. Fry in hot pan or on hot griddle, as you normally would make pancakes. 3. ~*SYRUP: 4. In a medium saucepan, mix together sugar, cornstarch, cinnamon, and nutmeg. Turn to medium heat and gradually add apple cider and lemon juice, whisking often. Bring mixture to a boil – boil and whisk for 1 minute. Remove pan for heat. Add butter, whisking until fully melted and incorporated into the mixture. 5. Serve syrup hot over apple pancakes. |
