APPLE PANCAKES WITH APPLE PECAN SYRUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991. Ingredients:
1-1/2 cups sifted all purpose flour |
1-1/4 teaspoons baking powder |
3/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/4 cup granulated sugar |
1 egg well beaten |
1 cup milk at room temperature |
1/4 cup butter melted |
1 cup finely chopped apples |
syrup |
3 tablespoons butter |
1/4 cup chopped pecans |
1 cup maple syrup |
1/2 teaspoon cinnamon |
1/8 teaspoon salt |
2 cups thinly sliced peeled apples |
Directions:
1. Mix and sift flour, baking powder, salt, cinnamon and sugar then sift again. 2. Combine egg, milk, butter and apples and add gradually to flour mixture. 3. Stir only until dry ingredients are moistened then bake on hot greased griddle. 4. To make syrup melt butter then add nuts and brown lightly then remove nuts and set aside. 5. Add maple syrup, cinnamon and salt to butter in saucepan then add apples and cover. 6. Simmer slowly for 10 minutes then remove cover and simmer 3 minutes longer. 7. Remove from heat and stir in huts then serve over pancakes while warm. |
