APPLE PANCAKES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Turner Estate in Wylie, Texas in 1991. Ingredients:
2/3 cup flour |
2 teaspoons sugar |
1/4 teaspoon salt |
4 large eggs beaten |
1/2 cup milk |
2 cups sliced apples |
3/4 cup butter |
2 tablespoons granulated sugar |
1/4 teaspoon cinnamon |
Directions:
1. Sift together flour, sugar and salt. 2. Beat eggs and milk together then gradually add flour mixture and beat until smooth. 3. Sauté apples in 1/4 cup of butter until tender. 4. Mix 2 tablespoons sugar with the cinnamon and toss with sautéed apples. 5. Melt 2 tablespoons butter in a 6 deep fry pan then pour batter until about 1/4 . 6. When set place 1/4 of the apples on top of batter then cover with more batter. 7. Fry pancake until lightly browned on both sides then keep warm. 8. Repeat procedure 3 times until all batter and apples are used then serve warm. |
