An apple a day keeps the doctor away... If only this were true! Well at least they taste good right!
Ingredients:
2 cups flour
1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
2 cups buttermilk
2 large eggs
2 tablespoons butter, melted
1 large granny smith apple, peeled and chopped
Directions:
1. Combine flour, sugar, baking soda and salt and make a well in center of the dry mixture.
2. Stir together buttermilk, eggs and butter.
3. Add to dry ingredients, stirring just until moistened.
4. Fold in apple.
5. Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle.
6. Cook until tops are covered with bubbles and edges look cooked; turn and cook other side.
