Apple Of Your Eye Cheesecake |

This is one of my favorite cheesecake recipes because it is so light-you can always fit a sliver in no matter how full you are. And it looks spectacular. You must try it! Ingredients:
1 c graham cracker crumbs |
3 t sugar |
1/2 tsp. ground cinnamon |
14/ c butter or marg. melted |
3 - 8 oz pkgs cream cheese, softened |
3/4 c. sugar |
3 eggs |
3/4 tsp. vanilla |
2 1/2 c chopped apples (granny smith) |
1 t lemon juice |
1/4 c sugar |
1/2 tsp. ground cinnamon |
6 t caramel ice cream topping, divided |
sweetend whipped cream |
2 t chopped pecans |
Directions:
1. Combine first 5 ingredients in bowl; press onto bottom of lightly greased 9 in. springform pan. Bake 350 - 10 minutes; cool. 2. In a mixing bowl, beat cream cheese & sugar until smooth. Add eggs; beat on low just until combined. Stir in vanilla. Pour over crust. Toss apples with lemon juice, sugar & cinammon. Spoon over filling. Bake 350 for 55-60 minutes or until center is almost set. Cool on wire rack for 10 minutes. Carefully run knife around edges to loosen. Drizzle with 4 T caramel topping. Cool for 1 hour. Chill overnight. Remove sides of pan. Just before serving, garnish with whipped cream. Drizzle with remaining caramel and sprinkle with chopped pecans. Store in fridge. |
