A good start on a chilly day. Ingredients:
1 1/2 cups all-purpose flour |
1 cup old fashioned oats |
1/3 cup firmly packed dark brown sugar |
2 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/2 cup unsalted butter, chilled |
1 large egg |
1/4 cup milk |
2 tablespoons molasses |
1 teaspoon vanilla extract |
3/4 cup diced unpeeled apple |
2/3 cup chopped pitted dates |
Directions:
1. Preheat oven to 375°; lightly butter a 10-inch diameter circle in the center of a baking sheet. 2. In a bowl, stir the flour, oats, brown sugar, baking powder, and salt together. 3. Cut the butter into 1/2 inch cubes and distribute them over the flour mixture. 4. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs. 5. In a small bowl, stir the egg, milk, molasses, and vanilla together. 6. Add the milk mixture to the flour mixture and stir to combine; the dough will be sticky. 7. Stir in the apple and dates until evenly distributed. 8. Spread the dough into an 8-inch diameter circle in the center of the prepared baking sheet. 9. With a serrated knife, cut into 8 wedges; bake 22-27 minutes, or until a cake tester comes out clean. 10. Remove the baking sheet to a wire rack and cool for 10 minutes. 11. Using a spatula, transfer the scones to the wire rack to cool. 12. Recut into wedges, if necessary; serve warm. |
