Clipped from the Genesee Valley Penny Saver. I make mine with all whole wheat flour. Absolutely delicious!
Ingredients:
1 1/2 cups quick-cooking oats
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup raisins
1 cup finely chopped peeled apple
1 egg, slightly beaten
1/2 cup honey
1/2 cup oil
1/3 cup milk
Directions:
1. Preheat oven to 375*.
2. Combine oats, flours, brown sugar, baking powder and soda, salt and cinnamon. Stir in raisins and apples.
3. In a large bowl, combine egg, honey, oil and milk.
4. Stir in dry ingredients. Mix to form a smooth batter.
5. Drop onto ungreased baking sheet using a rounded teaspoon of dough. Leave 2 inches apart.
6. Dip fingers into water and gently press dough down to 1 1/2 inch diameter.
7. Bake 10-12 minutes.
