Clipped from the Genesee Valley Penny Saver. I make mine with all whole wheat flour. Absolutely delicious! Ingredients:
1 1/2 cups quick-cooking oats |
3/4 cup all-purpose flour |
3/4 cup whole wheat flour |
1/2 cup packed brown sugar |
1 teaspoon baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
1 1/2 teaspoons cinnamon |
1/2 cup raisins |
1 cup finely chopped peeled apple |
1 egg, slightly beaten |
1/2 cup honey |
1/2 cup oil |
1/3 cup milk |
Directions:
1. Preheat oven to 375*. 2. Combine oats, flours, brown sugar, baking powder and soda, salt and cinnamon. Stir in raisins and apples. 3. In a large bowl, combine egg, honey, oil and milk. 4. Stir in dry ingredients. Mix to form a smooth batter. 5. Drop onto ungreased baking sheet using a rounded teaspoon of dough. Leave 2 inches apart. 6. Dip fingers into water and gently press dough down to 1 1/2 inch diameter. 7. Bake 10-12 minutes. |
