This is a recipe that I got out of one of my cooking magazines about 4 months ago and have been enjoying ever since. It's popular with my husband and our young sons. We make a point of having a big brunch on Saturdays and Sundays since we all love breakfast food but seldom hvea time for more than a bowl of cereal and fruit on weekday mornings. This oatmeal is a favorite part of any brunch menu. Ingredients:
3-cups water |
2 medium tart apples, chopped (i like to use fuji or cameo) |
1-1/2-cups old fashioned oats |
dash salt |
1/4-cup packed brown sugar |
1/2-tspn cinnamon |
1/2-tspn vanilla |
maple syrup |
Directions:
1. In a large saucepan over meium heat, bring water to a boil. Add the apples, oats, and salt; cook and stir for 5 minutes. Remove from the heat; stir in the brown sugar, cinnamon and vanilla. Cover and let stand for a minute. Serve with (or without) syrup. 2. -Susana in Louisiana |
