Apple-Nut Loaf Bread

A wonderful apple bread that bakes out great, these freeze very well ;-)
Ingredients:
4 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
4 eggs, beaten
1 cup vegetable oil
1/4 cup sour cream
2 teaspoons vanilla
2 cups chopped apples
1 cup chopped nuts
Directions:
1. Set oven to 350 degrees.
2. Set oven rack to second-lowest position.
3. Grease two loaf pans, or 7 mini loaf pans.
4. Sift together flour, baking soda, cinnamon and salt; set aside.
5. Combine sugar, eggs, oil, sour cream and vanilla; beat well.
6. Blend into flour mixture.
7. Fold in apples and nuts.
8. Pour into prepared pans.
9. Bake 1 hour or until loaves test done.
10. Bake less time for mini loaves.
