Apple Nut Cranberry Crisp |

Great for a holiday dinner. Makes 16 or more servings. Serve warm with vanilla ice cream. I found the original recipe in 1975 in the New York Daily News Food section and have tweaked it over the years. Ingredients:
2 cups flour |
1 cup oatmeal |
1 cup brown sugar |
1/2 teaspoon salt |
1 cup butter, softened |
8 cups apples, sliced |
1 cup cranberries, dried |
1 cup pecans, chopped |
1 teaspoon cinnamon |
1 cup sugar |
3 tablespoons cornstarch |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 350 degrees. 2. In food processor, chop together flour, oatmeal, brown sugar, salt and butter until crumbled. 3. In a large bowl, mix together chopped apples with all the rest of the ingredients. 4. Divide oatmeal mixture in half and press into bottom and sides of a 13 x 9 pan. 5. Pour apple mixture into pan and sprinkle the rest of the oatmeal mixture on top. 6. Bake for one hour or until lightly browned and bubbly. |
