Got this recipe out of the T.V. Times magazine years ago. It was a big hit with family and friends alike. Thought I'd lost it, but came across it while cleaning out some kitchen drawers. If you like apples, you'll love this cake. Read more . Takes time to bake, but its worth it. Ingredients:
3 1/2 tart apples, peeled |
1 cup chopped walnuts or pecans |
1 1/2 cups vegetable oil |
1 1/2 cups sugar |
1/2 cup brown sugar,packed |
3 lg. eggs |
3 cups all-purpose flour |
2 tsp cinnamon |
1 tsp baking soda |
1/2 tsp freshly grated nutmeg |
1/2 tsp salt |
glaze |
3 tbsp butter |
3 tbsp light brown sugar |
3 tbsp sugar |
3 tbsp heavy cream |
1/2 tsp vanilla |
Directions:
1. Preheat oven to 325F ( 160C). Generously grease and flour a 10 tube pan. 2. In a bowl, combine oil and sugars. 3. Add 3 eggs and beat well. 4. In a separate bowl sift dry ingredients. Add to first mixture and blend thoroughly. 5. Peel and dice apples into large pieces and fold into batter along with nuts 6. Spread batter evenly in pan and bake 75 - 90 minutes ( 1 /14 - 1 1/2 hrs) 7. Cool in pan about 20 minutes, then turn onto wire rack. 8. ******************************************************************************* 9. To make glaze: 10. Combine ingredients in a heavy saucepan and bring to a boil over medium heat. 11. Boil 1-3 minutes, spread over warm cake and serve. |
