Do try this muffins. It is simple and not too sweet.
Ingredients:
1 1/4 cups flour
2 granny smith apples ' diced
1/2 cup sugar
1/2 cup oil
1 egg
1/2 cup groundnut, fried without oil ' crushed
1/2 orange ' extract the juice and finely grate the rind
1 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 teaspoon vanilla essence
a pinch of salt
raisins or cherries for decoration
Directions:
1. Sift flour, baking powder, bicarbonate soda, ground cinnamon and salt into a big bowl.
2. In a separate bowl, whisk egg, sugar and oil till well combined. Add in vanilla essence, orange juice and orange rind.
3. Pour the mixture into the dry ingredients, along with the apples and the nuts. Mix with the whisk just till well incorporated. Do not over mix.
4. Spoon the mixture into the prepared muffin pans layered with muffin paper cups.
5. Bake in a preheated oven at 180 C for 12 - 15 minutes.
