This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. Ingredients:
2 cups sifted flour |
1/4 cup sugar |
1/2 teaspoon salt |
4 teaspoons baking powder |
1/2 teaspoon cinnamon |
1 egg, well beaten |
1 cup milk |
1/4 cup shortening melted and cooled |
1 cup sliced apples |
1/4 cup sugar |
Directions:
1. Sift together the first 5 ingredients. 2. Blend in milk and melted shortening then stir just enough to mix. 3. Carefully fold in apples that have been sweetened with the sugar. 4. Pour into well greased muffin pan filling each cup 2/3 full. 5. Bake 25 minutes at 400 then serve piping hot. |
