Great tasting and healthy apple muffins! Ingredients:
1/4 cup vegetable oil |
1 egg |
1/4 cup honey |
1/2 cup sugar |
2 cups whole wheat flour |
1 tbs. baking powder |
1/4 tsp. salt |
2 tsp. cinnamon |
1 cup milk |
1 tsp. vanilla |
1 cup chopped apples, any works |
brown sugar |
Directions:
1. Preheat oven to 375 and lightly grease a 12 cup muffin pan. 2. Beat egg, oil and honey in a large bowl. Add sugar beating until blended. 3. In separate bowl mix flour, baking powder, salt and cinnamon. Add alternately into sugar mixture with milk. Stir in vanilla and fold in apples. 4. pour 2/3rds full into muffin tins. Sprinkle brown sugar on top of muffins. 5. Bake 18-20 minutes until lightly browned. |
