A nice start to the morning.
Ingredients:
2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 dash salt
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/8 teaspoon nutmeg
2 apples
1 egg
1 cup low-fat buttermilk
1/4 cup oil or 1/4 cup melted butter
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/8 teaspoon clove
Directions:
1. Preheat oven to 400 degrees.
2. Peel, core and mince apples.
3. Mix together flour, baking powder, salt, brown sugar and spices. Blend in apples. Make a well in the centre.
4. In a separate bowl, whisk together buttermilk, egg and oil. Pour into the well and blend until moist. Do not over mix.
5. Fill greased muffin tins. If using, sprinkle with topping. Bake for 16 to 19 minutes.
6. Allow to sit for about 5 minutes and remove from Muffin tins to a plate. Enjoy.
