Apple-Mincemeat Pie

phyllo pastry filled with apple-mincemeat mixture
Ingredients:
7 sheets phyllo pastry
550 g mincemeat
2 apples, peeled and chopped
20 g canola oil (about fifteen 1.5 second sprays of pam)
Directions:
1. Preheat oven to 400 F.
2. Combine apples and mincemeat in a bowl.
3. Lightly spray a pie plate with oil.
4. One sheet at a time, lightly spray each sheet of phyllo pastry with Pam then fold in half and lightly spray again. Lay sheet of pastry half-in-half-out of pie dish. Stagger the sheets so that the base is completely covered.
5. Spread apple-mincemeat mixture in middle of pastry.
6. One sheet at a time, loosely fold pastry in so that the top of the pie looks ragged/swirly.
7. Lightly spray top of pie with oil.
8. Bake for 45 minutes or until pastry is golden brown.
