This is our favorite meatloaf, its fast and easy to make and the leftovers are great in sandwiches or rolled up in soft tacos with cheese tomato and lettuce. Ingredients:
1 large onion, finely chopped |
2 tablespoons butter |
2 1/2 lbs ground beef |
1 1/2 cups fresh breadcrumbs |
2 cups apples, peeled and cored, finely chopped |
3 eggs, beaten |
1 tablespoon chopped parsley |
1/2 teaspoon ground black pepper |
2 teaspoons salt |
1/4 teaspoon allspice |
1/4 teaspoon dry mustard |
1/4 cup ketchup |
Directions:
1. Saute onion in butter until soft. 2. Combine all ingredients, mixing thoroughly. 3. Form into loaf and place in 10- x 14-inch baking pan (or pack into large, greased loaf pan). 4. Bake at 350 degrees, for 1 hour. 5. Remove from oven and let sit 15 minutes before serving. |
