Apple, Mango, & Apricot Muesli |

From Annabel Karmel's First Meals book of baby and toddler recipes. A nice flavorful, healthful, and energy packed breakfast that subsitutes fresh fruit and raw grains for the usual sugary commercially bought fare. Ingredients:
1/2 c dried mangoes |
1/2 c dried apricots |
3 t raisins |
1 1/2 c muesli mix or 3/4 each oat flakes & wheat flakes |
1/4 c finely chopped hazelnuts (optional) |
1 1/2 c apple & mango juice or just apple juice |
1/2 red apple, cored & chopped |
extra fresh fruit such as bananas, raspberries (optional) |
Directions:
1. Soak the dried fruit, muesli mix, and nuts in the juice overnight or for several hours. 2. In the morning, stir in the apple and your chosen extra fresh fruit and serve with milk, if desired. |
