A delicious, moist apple bread that contains no nuts. Ingredients:
3 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon ground cinnamon (or penzeys cake spice) |
1/4 teaspoon baking powder |
3 eggs |
3 cups granny smith apples, shredded |
2 cups sugar |
2/3 cup vegetable oil |
1 1/2 teaspoons vanilla extract |
Directions:
1. Preheat oven to 325°F. 2. Grease and flour two 8x4x2 in loaf pans. 3. In a bowl, combine flour, soda, salt, cinnamon, and baking powder. 4. In a separate, larger bowl, combine eggs, apples, sugar, oil, and vanilla. 5. Stir in flour mixture just until moistened. 6. Pour batter into prepared pans. 7. Bake for 1 hour or until toothpick inserted in centre of loaf comes out clean. 8. Cool in pans for 10 minutes. 9. Remove and cool on wire racks. |
